Meal Planner Monday: Open-faced Tuna Melt Sandwich
I wanted a change from the soups and comfort foods that I have been making lately, so I made a Tuna Melt for dinner the other night...rather inexpensive and healthy...
I did not take a picture, but I will share my recipe...Use your favorite recipe to make the Tuna Salad (I make mine with some chopped onion, chopped celery, low-fat mayo, salt, pepper). Toast 1 slice of bread (whole-grain would be best but that's not what I had). On the toast: layer with lettuce leaves, then tuna salad, then tomatoes (I used the grape cherry tomatoes which I think have the best flavor this time of year), then a slice of cheddar cheese. Stick it in the microwave just until the cheese is melted.

keith loves tuna melts over fancy dinners often! nice n cheap! I usually make the full sandwich though and cook it like a grilled cheese on the stovetop... your open-faced way sounds even simpler!
